I have a secret. I edited the photos in this post with a Lightroom preset I downloaded from Creative Market. I’m talking one-click and I was happy with it. I discovered Creative Market back when I worked as a Director of Marketing and was hooked after I liked a few of the free downloads they offer every week to help showcase some of the creators selling their products on the site. I’ve purchased a good number of fonts, templates and other photography goodies from this site. I also used these presets to edit the photos in my holiday dinner graze board post. This is the second set of food photos I’ve used these presets for and I feel like my game has been seriously upped. I’ve only been trying to make my photos look this good for the 7 or so years I’ve been “blogging.”

Oh well let’s talk about this bowl. It’s a classic Sarah combo of sweet and savory and it’s exactly what a lot of us are craving this time of year, comforting but still good for us food.

Warm Chicken, Apple and Fennel Power Bowls

Ingredients

  • 1 bunch tuscan kale

  • 1 Honeycrisp apple

  • 1 fennel bulb

  • 2 cooked chicken breasts

  • 3 slices bacon

  • sprouted pumpkin seeds

  • crumbly goat cheese

  • Seeds of Change brown rice & quinoa mix (or some cooked brown rice, quinoa or a combo)

  • Honey Balsamic dressing (I used Tessemae’s)

Instructions

In a large pan, fry the 3 strips of bacon. Set aside on a paper towel. Once cool, crumble the bacon

Pour off the excess bacon grease, but do not wipe out the pan. Working in batches, add the roughly chopped kale to the pan and lightly sauté. Sprinkle each batch with a pinch of salt and give it a final stir before removing it to a bowl. Once all of the kale is cooked, heat the rice/quinoa mixture in the same pan according to the package directions.

To serve - divide the rice, kale, apple, fennel and bacon crumbles between four bowls. Sprinkle each with goat cheese and pumpkin seeds and finish with a drizzle of honey balsamic dressing and some freshly ground black pepper.
