Another Quick Dinner for Two

Something I really like about our regular grocery store (Wegmans) the packaged-for-two seafood options. I know packaging is bad but these things just make my life so much easier, and sometimes there's nothing wrong with that. Ya know? The Mahi Mahi is frequently purchased and is often the center of quick meals I need to pull together at 9 pm when I've lost track of time, am hungry and Rob is on his way home from work also hungry. Something else I really like love, how a home cooked meal and a few minutes spent laughing together can erase any hurt feelings from a rough morning. Now I know Mahi Mahi was part of the menu the last time I posted a meal for two, and I'm sorry but it's half of this meal too. Only this time there's Sriracha & butter involved. Cool? Cool.

I recently purchased a grill pan, and I think I've used it every day since. This meal was no exception.

Mahi Mahi with Sriracha Butter

To cook the fish I simply thawed the fillets in a bowl of cold water (water replaced several times) and once ready, gave them a little pat down with a paper towel and seasoned them with salt and pepper. I heat my grill pan over medium high heat and sprayed with a little cooking oil. Once ready I tossed the fish fillets on to the pan and let cook for 2-3 minutes on each side. While the first side was cooking I melted a tablespoon and a half of butter in the microwave and then stirred in a little Sriracha. Right before I flipped the fish I spooned about half the mixture over top. The rest of the butter was spooned over the other side of the fillets. Easy peasy, lemon squeezy.

To serve alongside I tossed together a big bowl of Sprouted Kitchen's Kale & Slivered Brussels Sprout Soba Noodle Salad. (Which also made for a few delicious lunches with a fried egg on top.)

In between several bites, Rob made sure to mention how good the meal was. That is saying something considering there was raw kale and brussels sprouts involved.

The meal was finished properly with shared cupcakes. (Note: when I say share, I mean we cut multiple cupcakes in half so we could try all of them ;-). It's a good practice.)
