Dinner for Two - Apple Chicken Sausage Hoagies

Leftovers are probably the best part of cooking for two. This meal is a perfect example. In the middle of a busy work week, nothing beats an easy meal that also means no stress the next day as you're rushing out the door. These are an often occurring meal in our house. Hearty enough to satisfy my man's appetite and the sweet and savory combination makes me a happy girl. Apple Chicken Sausage Hoagies (makes enough for two for dinner and two for tomorrow's lunch)

Apple Chicken Sausage Hoagies

1 tablespoon butter
1 yellow onion, sliced
1 apple, julienned
olive oil
1 package of 4 apple chicken sausages
4, hoagie rolls
spicy brown mustard
 

 Melt butter in a large pan over medium heat. Toss in the onions and lower the heat just a smidge. Allow the onions to caramelize, stirring every so often and making sure no pieces are burning. At about the 15 minute mark toss in the apples and allow to cook for 5-10 more minutes. Once those are finished, squirt 2-3 tablespoons of the mustard in the pan and stir to coat everything, then pour it all into a bowl.

Return the pan to the stove and turn the heat back up to medium. Put about 1/2 tablespoon olive oil in the pan, just to make sure it's all covered. Cook the sausages over medium heat until heated through. In the meantime toast 2 of the buns.

Once the sausages are ready, plate your buns and place one sausage and 1/4 of the onion apple mixture on top. Drizzle a little bit more of the mustard on top of everything.
