Feel good about eating cookie dough


OK, full disclosure, the title of this post is misleading. The recipe featured is not actually cookie dough, but it tastes so damn close it makes me want to dance. I have a raging sweet tooth, and I've found it's much better to indulge it occasionally, as trying to cut out all sugar ends up with me and an empty pint of Half Baked Ben & Jerry's. If you aren't familiar with it, Half Baked is chocolate & vanilla ice cream studded with fudge brownie pieces & chunks of chocolate chip cookie dough. It's the best thing ever, but let's get real, pints of ice cream probably won't add up to looking hot on your wedding day (or on vacation, birthday party, etc.) What's a girl to do? She should throw things in a food processor/Vitamix like the recipe below says.

Raw Cookie Dough Bites

Raw Chocolate Chip Cookie Dough Bites (inspired by these)

2/3 cup raw almonds
1/3 cup rolled oats
1 scoop of your favorite vanilla protein powder
1 teaspoon vanilla
3 tablespoons organic agave (or honey)
handful of cacao chips

raw cookie dough ingredients

Add all of the ingredients except the cacao chips into a food processor or high powered blender (I used the dry container for our Vitamix). Process/blend until the ingredients come together. It really will look dough-like. After that pour it out into a bowl (and let it cool if necessary.) Add the cacao chips to the dough and using your hands/a spoon roll/press the "dough" into 8-9 balls.

I also made a cashew-coconut version. Just sub in cashews for the almonds and add 1/2 cup unsweetened coconut flakes. (Cacao chips still optional :-).)
