I am a Food Blogger Against Hunger

What happens to you when you're hungry? I tend to get cranky and even worse sometimes come down with a migraine. Have you ever had to skip a meal? How did it feel? Can you imagine having to choose to skip multiple meals or not knowing where your next meal is coming from? It's heartbreaking that for many, it's not something they have to imagine, it's their everyday. Today I am very proud to be donating this post to help raise awareness for all those who are going hungry in this country. For those 1 in 4 children who don't know where their next meal will come from. Don't believe me when I say this is a pressing issue? Get even more of the facts here.


It's ridiculous that fruits and vegetables, those things you build healthy meals with, are more expensive than chips, sodas and other processed foods. I know boxed macaroni and cheese tastes delicious, but it's never going to magically supply children with all the necessary vitamins and minerals they need to grow up healthy and strong.

Imagine going to the grocery store with $4 and having to make that stretch to pay for an entire meal? For the millions who participate in the nation's food stamp program, that's all they get per day per person to supplement their food budget. I wandered around the produce section for a few minutes last week trying to brainstorm and it was quite a challenge. Two of my favorite childhood dishes kept popping into my head though, a simple quiche and sauerkraut.

Quiche was enjoyed at least once a week in my house growing up. Frozen pie crusts, eggs, frozen spinach, milk and cheese are really all you need and are all easily found ingredients. (It could really even be made without the crust for an even more budget friendly option.) Thaw and drain 1 box of frozen spinach, mix together 4 eggs, 1.5 cups milk and pour into your pie dish (with or without crust), sprinkle 1 cup of shredded cheese and the defrosted spinach throughout and bake at 350 degrees Fahrenheit for  50-55 minutes or until the eggs are set.

Sauerkraut is a holiday tradition in our family. It wasn't until recently that I began cooking up my own. Bagged sauerkraut is a very inexpensive ingredient and if that's not available it can be found in the canned vegetable aisle. I like to saute some diced onions to start, then I add in half a diced apple, a chopped potato, the entire bag of sauerkraut (rinsed), some cubed ham (optional) and just a little sugar. Then I leave the whole thing to simmer for about 45 minutes. It's really the apples, onions and sugar that make the dish in my opinion, the other stuff can totally be omitted if necessary.

As much as I love both of these meals, I know how lucky I am to be able to afford whatever ingredients I want and enjoy a variety of healthy foods. Of course not everyone is so fortunate, and there is the SNAP (Supplemental Nutrition Assistance Program, formerly known as food stamps) to offer some help. The recently released documentary, A Place at the Table, follows the experiences of three very real families who struggle with food insecurity and sheds light on the very real problem of hunger in America.
