Roasted Garlic and Blue Cheese Meatball Subs

Halfway though February already ... what the what!? It's been an exciting month and half over here, I was recently given an opportunity I couldn't turn down and started working for a nearby county's tourism and promotion office. Back to having a side hustle, back to being a little busier than usual. Fitting in moments to relax, take care of myself and most importantly, spend time in the kitchen become really important (and a little more challenging). Back to being extra grateful for lazy Sunday's like the one just past. Days where you decide to start watching a new series on Netflix and one episode turns into five or six and comfort food is the only thing that will do. We started making our way through the first season of Dexter (Rob has seen up to about season four, I've never seen more than a snippet) and I made meatball subs. There was blue cheese and roasted garlic involved, our comfort food cravings were quite satisfied. Blue Cheese Roasted Garlic Meatball Sub

Roasted Garlic Blue Cheese Meatball Subs (makes enough for 5 subs)

1 head garlic
olive oil
1 pound ground beef
1 egg
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup crumbled blue cheese, divided (I used some smoky blue from Rouge Creamery)
tomato sauce
5 whole wheat hot dog buns
 

Preheat oven to 400 degrees Fahrenheit. Cut the top off of the head of garlic, revealing all the open cloves. Place the garlic on a small sheet of aluminum folder and douse with a bit of olive oil. Wrap the aluminum around the garlic and toss the packet in the oven for about 45 minutes, or until the cloves are soft and your kitchen smells amazing. Pull the garlic packet out and open it, let the garlic cool for 10-15 minutes. Reduce the oven heat to 350 degrees Fahrenheit.

Once the garlic is cooled, squeeze the cloves out into a medium bowl. Add the ground beef, egg, blue cheese, salt and pepper and mix it all together. Using your hands roll out 15 meatballs and place them on a greased baking sheet. Bake the meatballs at 350 for about 25 minutes.

Blue Cheese and Roasted Garlic Meatballs

Pull the meatballs out of the oven and turn on your broiler. Open all the hot dog rolls and place on a baking sheet. Spoon some tomato sauce onto the bottom of each roll, top each roll with three meatballs and another generous sprinkle of blue cheese. Place under the broiler for 2-3 minutes, until the cheese is melty and the edges of the rolls are starting to get toasted. Remove the subs from the oven and let cool for a minute or two. Then dig in!
