Spring Sunset Salad Bowls | Seasonal Recipes | BySarahRae.com I love trying the latest superfoods as much as the next wellness enthusiast, but sometimes nothing beats a big serving of real food. These Spring Sunset Salad Bowls were incredibly satisfying. The protein and fiber probably had something to do with that, but I'd also venture a guess that the presentation helped as well.  It's a lot easier to convince yourself that vegetables are going to be delicious when they're also eye candy.

This is one of those "non-recipe" recipes that when prepped ahead of time will make for plenty of not-sorry desk lunches during the week.

Spring Sunset Salad Bowls

Ingredients
  • [u]For the bowls:[/u]
  • Beet noodles
  • sweet potato noodles
  • grilled chicken
  • sliced radish
  • fresh mint
  • sunflower seeds
  • chive blossoms
  • *other ideas - avocado slices, crumbled goat cheese
  • [u]Honey Balsamic Vinaigrette[/u]
  • - 2 tbsp balsamic vinegar
  • - 1 tbsp honey
  • - 1 tsp dijon mustard
  • - 1/4 cup olive oil
  • - salt & pepper
Instructions
  1. [u]For the bowls:[/u]
  2. Pile all of the ingredients into a bowl, drizzle with dressing & dig in!
  3. [u]For the dressing:[/u]
  4. Shake all dressing ingredients in a small jar until well combined.

The trick with these is the fresh herbs, radishes and chive blossoms, they pack some serious flavor. If beets aren't your thing, I'd say switch those out for whatever veggie noodles strike your fancy.
