Pretty Strawberry & Mango Popsicles


Strawberry Mango Popsicles | I love having a stash of popsicles in the fridge. I originally developed this recipe with pregnant mamas in mind, but these make a perfect warm weather treat for anyone. Heck, I'd say these are even healthy enough for breakfast.

Pretty Strawberry & Mango Popsicles

  • 2 cups strawberries, hulled and roughly chopped
  • 2 scant tablespoons honey
  • 1 teaspoon lime juice
  • 1.5 cups mango (fresh or frozen)
  • 2 scant tablespoons honey
  • 4 oz. greek yogurt
  • 2-3 tablespoons almond milk (or milk of your choice)
  1. [b]For the strawberry layer[/b]
  2. In a blender combine the strawberries, 2 tablespoons honey and lime juice. Strain mixture into a bowl through a fine mesh strainer, using a spatula to push the liquid through. Set aside.
  3. [b]For the mango layer[/b]
  4. In a blender combine the mango, 2 tablespoons honey, greek yogurt and 2 tablespoons almond milk. If needed, add more almond milk to reach a smooth consistency. Put the mango mixture in the fridge for now.
  5. [b]To make the popsicles[/b]
  6. Pour strawberry mixture into popsicle molds and place in the freezer for about an hour. Once the strawberry layer has started to set, remove molds from freezer and pour the mango layer on top. Add popsicle sticks and return molds to the freezer to set completely.
