Strawberry, Mint and Coconut Pineapple Protein Popsicles
The heat is upon us! In my neck of the woods the forecast is calling for highs in the 90s. Time to start eating all the cold things. Glad I finally picked up a popsicle mold. This thing is going to get so much use. This first batch was made on a whim and actually turned out so much better than I imagined. The best part, the protein powder offers a little staying power and turns these treats into a perfect post-summer workout refresher.
Strawberry, Mint and Coconut Pineapple Protein Popsicles1 container coconut water with pineapple (I used VitaCoco) 1.5 - 2 cups fresh strawberries 2-3 tablespoons fresh mint 1 packet Perfect Fit Protein Powder
Combine everything in the blender until smooth, pour into popsicle molds and leave for a few hours to solidify. (This will make more mix than you probably need. I poured the excess into small paper cups and after about an hour stuck wooden skewers in the middle.)
